Banana Zucchini Breakfast Bites

- 1/3 cup Olive oil
- 2 ea. Cage-free eggs
- 4 ea. Overripe organic bananas
- 1 Tbsp. Baking soda
- 1/2 tsp. Salt
- 1 tsp. Ground cinnamon
- 1 tsp. Vanilla
- 1-2/3 cup Whole wheat flour
Preheat oven to 350 degrees F.
Grease mini muffin tin and set aside.
Blend together all ingredients except flour.
Add the flour and blend.
Portion mixture into muffin tins and bake roughly 20 minutes.
