Nicole Hinckley is a registered and licensed dietitian based in Dallas, Tx. She is the owner of Blissful Nutrition where her mission is to change the lives of as many individuals as she can by helping her client’s find their perfect balance. Nicole believes in living life to the fullest, without restriction to become a healthier, happier, and more confident version of yourself.
Nicole’s passion is to teach her clients how to listen to what their body is signaling to them and learn how to respond accordingly. She believes in getting to the root of the issue in order to optimize overall health.
Nicole currently works alongside Busy Body Prep with the Dallas Cowboys Cheerleaders. She also works one on one with the professional athletes at SandersFit to ensure they are receiving top-notch nutrition for pre, during and post-games/practices. She has experience helping clients struggling with PCOS, weight loss/gain, fatigue, hypothyroidism, diabetes, and so much more.
In addition to Nicole’s private practice, she loves speaking and consulting for a variety of brands and companies. She travels around the country as a food stylist with one of the best sports dietitians in the world, Amy Goodson, MS, RD, CSSD, LD. Together, they have worked on several projects developing recipes, creating nutrition programs, food photography, and more.
When Nicole steps away from the office, you can find her on the trails or with her husband, Andrew, and four-year-old golden retriever, Bentley. Or you may find her in front of an excel sheet planning their next big adventure.
Meet Sara, our second Registered Dietitian Nutritionist (RDN) to join the Blissful Nutrition Team. Sara was born in Plano, TX and raised in Overland Park, KS. She appreciates her Texas roots and often drops a “y’all” in conversation, but calls KC home. She currently resides in Salt Lake City, UT and is absolutely captivated by the beauty of nature here. She is a very active human who loves to spend the majority of her time outside and in the mountains with friends, as well as their dogs since unfortunately she is not yet a proud pup owner. Sara is very passionate about running, loves playing tennis, practices yoga, hikes every chance she gets, enjoys kayaking and SUP in the summertime, and appreciates snowshoeing + cross country skiing during the winter months.
She holds a B.S. in Neuroscience from Drake University and finds the brain and its connection to the gut fascinating. Sara obtained her Master’s Degree concentrated in Sports Nutrition from the University of Utah and works part-time as a Sports Dietitian for their Athletics Department. She is a marathon distance and below, certified running coach through NAASFP and loves helping athletes train smarter, savvier, and safer.
Her biggest goal with any client or athlete is to help them become healthier, happier, and build sustainable habits for longevity in sport and/or life. Sara’s focus is on getting to the root of the issue, developing personalized strategies to help you move forward in your health journey, and ultimately THRIVE in whatever you desire to achieve. She is thrilled to work side by side with Nicole to employ a positive, whole food-focused, and nourishing approach to nutrition.

Sophia Deahl is currently a graduate student at University of Southern California in a master’s program of Nutrition, Healthspan, & Longevity to further her knowledge in medical nutrition therapy and complete the requirements to become a Registered Dietitian. Sophia is currently a content marketing manager for Nicole Hinckley Nutrition Consulting where she assists with a range of tasks including content creation, research, and marketing. Sophia looks forward to consulting and getting to know clients in the near future, while emphasizing balance!
