Veggie Skillet Eggs

- 1 T. Olive Oil
- 1 ea. Zucchini
- 3 c. Spinach
- 3 ea. Cherry tomatoes
- 2 ea. Portabella mushrooms, diced
- 1 ea. Garlic clove, minced
- 2 ea. Eggs
- To taste. Salt and pepper
In a skillet, sauté zucchini, mushrooms, and garlic in olive oil on medium heat for about 10 minutes.
Add in cherry tomatoes and spinach. Continue to cook on medium heat until the spinach has wilted down.
Crack the eggs into the pan and cook until desired consistency has been reached. Add salt and pepper to taste.
