Veggie Skillet Eggs

Ingredients
- 1 T. Olive Oil
- 1 ea. Zucchini
- 3 c. Spinach
- 3 ea. Cherry tomatoes
- 2 ea. Portabella mushrooms, diced
- 1 ea. Garlic clove, minced
- 2 ea. Eggs
- To taste. Salt and pepper
Instructions
- In a skillet, sauté zucchini, mushrooms, and garlic in olive oil on medium heat for about 10 minutes.
- Add in cherry tomatoes and spinach. Continue to cook on medium heat until the spinach has wilted down.
- Crack the eggs into the pan and cook until desired consistency has been reached. Add salt and pepper to taste.
