Veggie Skillet Eggs

Are you looking for a nutrient-rich meal? Working vegetables into your breakfast is a must! Here is one of my favorite ways to work all the veggies in!

Ingredients

  • 1 T. Olive Oil
  • 1 ea. Zucchini
  • 3 c. Spinach
  • 3 ea. Cherry tomatoes
  • 2 ea. Portabella mushrooms, diced
  • 1 ea. Garlic clove, minced
  • 2 ea. Eggs
  • To taste. Salt and pepper

Instructions

  • In a skillet, sauté zucchini, mushrooms, and garlic in olive oil on medium heat for about 10 minutes.
  • Add in cherry tomatoes and spinach. Continue to cook on medium heat until the spinach has wilted down.
  • Crack the eggs into the pan and cook until desired consistency has been reached. Add salt and pepper to taste.
