Zucchini Boats

- 1 lb. Ground beef (lean)
- 5 ea. Zucchini
- 3 ea. Garlic cloves, minced
- 1 ea. Onion, chopped
- 3/4 c. Cheddar cheese, shredded
- 1/4 c. Tomato paste
- 1 T. Avocado oil
- 1 t. Oregano
- 1 t. Gourmet burger seasoning
- 1/2 t. Paprika
- 1/2 t. Garlic powder
- 1/4 t. Salt
Preheat oven to 400 degrees F.
Slice zucchini length-wise forming the “boat” and scrape out the insides. Bake for approximately 30 minutes.
On medium heat, sauté onions and garlic until onions are translucent.
Stir in the beef and cook until brown.
Once complete, add beef mixture to fill zucchinis and sprinkle cheese on top
Bake for 5 minutes or until warm and cheese has melted.
