Zucchini Boats

This is a great option if you are getting tired of eating a side of steamed veggies. Start incorporating your vegetables into your meals, and it will be a game-changer. Try these kid-approved zucchini boats today!

Ingredients

  • 1 lb. Ground beef (lean)
  • 5 ea. Zucchini
  • 3 ea. Garlic cloves, minced
  • 1 ea. Onion, chopped
  • 3/4 c. Cheddar cheese, shredded
  • 1/4 c. Tomato paste
  • 1 T. Avocado oil
  • 1 t. Oregano
  • 1 t. Gourmet burger seasoning
  • 1/2 t. Paprika
  • 1/2 t. Garlic powder
  • 1/4 t. Salt

Instructions

  • Preheat oven to 400 degrees F.
  • Slice zucchini length-wise forming the “boat” and scrape out the insides. Bake for approximately 30 minutes.
  • On medium heat, sauté onions and garlic until onions are translucent.
  • Stir in the beef and cook until brown.
  • Once complete, add beef mixture to fill zucchinis and sprinkle cheese on top
  • Bake for 5 minutes or until warm and cheese has melted.
