Zucchini Boats

Ingredients
- 1 lb. Ground beef (lean)
- 5 ea. Zucchini
- 3 ea. Garlic cloves, minced
- 1 ea. Onion, chopped
- 3/4 c. Cheddar cheese, shredded
- 1/4 c. Tomato paste
- 1 T. Avocado oil
- 1 t. Oregano
- 1 t. Gourmet burger seasoning
- 1/2 t. Paprika
- 1/2 t. Garlic powder
- 1/4 t. Salt
Instructions
- Preheat oven to 400 degrees F.
- Slice zucchini length-wise forming the “boat” and scrape out the insides. Bake for approximately 30 minutes.
- On medium heat, sauté onions and garlic until onions are translucent.
- Stir in the beef and cook until brown.
- Once complete, add beef mixture to fill zucchinis and sprinkle cheese on top
- Bake for 5 minutes or until warm and cheese has melted.
