Simple Chicken Salad
I am not usually a huge chicken person, but this recipe is a winner. Not to mention it is the perfect protein addition to any meal or snack. Finding ways to make your favorite foods just a bit healthier will help you along your journey to a healthier you!

Ingredients
- 3 ea. Large chicken breasts
- 3 ea. Apples, chopped
- 1 cup Grapes, chopped
- 1/2 cup Olive oil mayonnaise (or to desired consistency)
- Salt/Pepper to taste
- Toasted pecans (optional)
Instructions
- Poach chicken breasts until fully cooked through.
- Chop chicken into bite-sized pieces and add to a stand-up mixer.
- Add remaining ingredients and continue adding mayo until desired consistency.
