Simple Chicken Salad

I am not usually a huge chicken person, but this recipe is a winner. Not to mention it is the perfect protein addition to any meal or snack. Finding ways to make your favorite foods just a bit healthier will help you along your journey to a healthier you!
Prep Time25 minutes


  • 3 ea. Large chicken breasts
  • 3 ea. Apples, chopped
  • 1 cup Grapes, chopped
  • 1/2 cup Olive oil mayonnaise (or to desired consistency)
  • Salt/Pepper to taste
  • Toasted pecans (optional)


  • Poach chicken breasts until fully cooked through.
  • Chop chicken into bite-sized pieces and add to a stand-up mixer.
  • Add remaining ingredients and continue adding mayo until desired consistency.
