Poached Sweet Potato Toast
It honestly doesn’t get better than this combo. The sweetness from the potato and the savory from the egg, plus the avocado, create an irresistible flavor. This breakfast or snack is packed with fiber which keeps you satisfied throughout the day!

Ingredients
- 4 ea. Eggs, poached
- 2 ea. Avocado, sliced
- 1 ea. Sweet potato
- 1 t. Avocado oil
- To taste Everything bagel seasoning
Instructions
- Preheat oven to 350 degrees F. Slice sweet potato length-wise into 4 slices. Spread them out over a wire pan and brush each side with avocado oil.
- Bake in the oven until golden brown and soft, flipping halfway through.
- Top each piece of “toast” with 1/2 sliced avocado, one poached egg, and everything bagel seasoning.
