Banana Zucchini Breakfast Bites

These muffins are perfect for the days when you are in a hurry and need a quick but nutritious breakfast option. It is also a great way to sneak some veggies into your family’s day!

Servings: 48 mini muffins

Ingredients

  • 1/3 cup Olive oil
  • 2 ea. Cage-free eggs
  • 4 ea. Overripe organic bananas
  • 1 Tbsp. Baking soda
  • 1/2 tsp. Salt
  • 1 tsp. Ground cinnamon
  • 1 tsp. Vanilla
  • 1-2/3 cup Whole wheat flour

Instructions

  • Preheat oven to 350 degrees F.
  • Grease mini muffin tin and set aside.
  • Blend together all ingredients except flour.
  • Add the flour and blend.
  • Portion mixture into muffin tins and bake roughly 20 minutes.
